Dough:
-6 cups flour
-6 eggs
-4/3 cup lukewarm water (or equivalent amount of sour cream for different dough texture)
-1 teaspoon salt
-6 cups flour
-6 eggs
-4/3 cup lukewarm water (or equivalent amount of sour cream for different dough texture)
-1 teaspoon salt
Dough:
-Mix flour+eggs+water+salt together, and work the dough. You want the dough to be slightly sticky, but not significantly so
-After dough has been made, I usually break into thirds and wrap in plastic wrap and put in fridge while I work with 1/3 of dough
-Roll dough till maybe an 1/8 of inch thick, and cut circles (I usually do about 3 inch in diameter)

Pierogi:
-Prepare large pot of boiling water
-Take each circle and fill with about a tablespoon of filling. Lightly wet the edge of the dough to seal the dumpling
-Put 4 or 5 completed pierogi into the water, and let them sit until they float to top
-Remove them, and let sit on plate to dry slightly
